Salad does not have to be all greens! You can add your favorite fruits, cheese or nuts. What do I put on my salad to make it different? The list goes on. Variety is the key. Here are some suggestions to top with Rafael’s Salad dressings.

  • avocado, mango, grapes, strawberries, sliced apples, mandarin oranges, blueberries, raspberries
  • different types of cheeses - Some good choices are goat, feta, gorgonzola, parmegiano reggiano, etc.
  • different types of nuts – walnuts, almonds, pecans, macadamias, etc.
  • sunflower seeds, dry roasted sesame seed, flax seeds
  • peppers - jalapeno, green, red, yellow, pickled jicama, black olives
  • broccoli and cauliflower florets - cut in small pieces
  • tomatoes
  • red onions
  • bacon bits
  • croutons
  • seared ahi tuna
  • blackened (or crispy) chicken breast
  • blackened shrimp

Candied Walnut Gorgonzola Salad

In a salad bowl, toss gently:

  • 1 (10 ounce) package spring mix greens
  • candied walnut halves
  • dried cranberries
  • crumbled Gorgonzola cheese
  • Rafael’s Balsamic Vinaigrette

Mango Salad

In a salad bowl, toss gently:

  • riped mango, peeled and diced
  • 1 (10 ounce) package spring mix greens
  • red bell pepper, seeded and thinly sliced
  • carrot, peeled and sliced
  • Rafael’s Honey Mustard

Blackened Chicken Salad

INGREDIENTS

  • 1/2 teaspoon paprika
  • 1/8 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon ground white pepper
  • 1/8 teaspoon onion powder
  • 2 skinless, boneless chicken breast halves
  • 1 tablespoon canola oil
  • 1 (10 ounce) package spring mix greens
  • Rafael’s Honey Mustard


DIRECTIONS

  1. Butterfly chicken breast. Mix together paprika, salt, cayenne, cumin, garlic powder, white pepper, and onion powder. Rub one side of chicken breasts with spice mixture.
  2. Heat oil in a skillet over high heat for 10 minutes.
  3. Place chicken in hot pan, seasoned side down until cooked. Turn, and cook on other side.
  4. Let cool and cut chicken in strips
  5. Served over mixed greens
  6. Dress salad with Rafael’s Honey Mustard
