Mango Salad In a salad bowl, toss gently: - riped mango, peeled and diced
- 1 (10 ounce) package spring mix greens
- red bell pepper, seeded and thinly sliced
- carrot, peeled and sliced
- Rafael’s Honey Mustard
Blackened Chicken Salad INGREDIENTS - 1/2 teaspoon paprika
- 1/8 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ground white pepper
- 1/8 teaspoon onion powder
- 2 skinless, boneless chicken breast halves
- 1 tablespoon canola oil
- 1 (10 ounce) package spring mix greens
- Rafael’s Honey Mustard
DIRECTIONS
- Butterfly chicken breast. Mix together paprika, salt, cayenne, cumin, garlic powder, white pepper, and onion powder. Rub one side of chicken breasts with spice mixture.
- Heat oil in a skillet over high heat for 10 minutes.
- Place chicken in hot pan, seasoned side down until cooked. Turn, and cook on other side.
- Let cool and cut chicken in strips
- Served over mixed greens
