Rafael D. Fajardo opened the Tidal Wave Seafood Restaurant and Oyster Bar (www.tidalwaverestaurant.com) in Old Town Monrovia, CA in March of 2003. His passion for cooking and commitment to excellence in flavor, texture and aroma made the restaurant a great success. In 2003-2004, the restaurant received “Best of the Best” for American Cuisine & Seafood by the Monrovia, Arcadia, Sierra Madre, and Pasadena weekly newspapers. And in 2004, Tidal Wave received a Zagat rating. In January 2007, Rafael decided to sell his restaurant and capitalize on the high volume sales of his salads, and focus his attention exclusively on developing the most frequently asked about salad dressings from the restaurant: Honey Mustard, Balsamic Vinaigrette, and their famous Sesame Ginger. In February 2007, Rafael opened RDF Foods, and started the process of production and promotion of these three favorite salad dressings.
